Two 1” boneless strip steaks, each weighing 10 to 12 ounces. Taken from the short loin behind the ribs, a strip steak has fat along one edge with some marbling throughout. Taken from a muscle that does little work, the strip is particularly tender, with fine-grained meat and a good, beefy flavor. Cook this one over high heat.
